Water floats as there is no gravity in space. The attraction between water molecules pulls the water together to form a really big drop of water that flies away. With surface tension, water molecules come together to form a sphere. If we were to touch the water droplets, as Newton's first law says, they would continue to move forward.
This forward motion makes water droplets very difficult to clean up. If you try to wipe them off, they fly away, bringing a lot of inconvenience to the astronauts.
